Fabulous pasta

This pasta dish was put together when cleaning out the fridge. It is so unbelievably tasty.

The sun-dried tomatoes which I found in the freezer(!) K bought these in South Africa like a year ago and I had forgotten all about them. Anyway, they looked alright. I soaked them in warm water until softened (about 15 minutes) and sliced into thin slivers.


These chili flakes are the last remnants of the food items we brought back from our holiday in Tuscany almost two years ago! I found them in the freezer too. This is why I am always complaining about the lack of storage space in the freezer!! Anyway, I am sure you can do better by using fresher produce.

500 g pasta

1 can tuna chunks in light olive oil, shredded roughly with fork

1/2 cup of sun-dried tomatoes, soaked and sliced

1/2 cup diced celery

4 cloves garlic, sliced thinly

2 tablespoon pine nuts, lightly toasted

2 tablespoon olive oil

1/2 cup freshly grated Parmesan

salt and pepper

Cook pasta in salted boiling water until your preferred softness.
Drain; keep a cup of the pasta water.
Heat oil in pan; add garlic and fry lightly.
Add in the celery (leave some for garnishing), tomatoes and tuna.
Cook for about 2 minutes; add the grated cheese.
Season with chili flakes, salt and pepper.
If the sauce is too dry add some of the pasta water.
Put the pasta into the sauce and mix well.
Dish out individually.
Serve garnish with more cheese, chili flakes, celery and pine nuts.

Spring cleaning? Hehehe..the pasta does look fabulous. I think i should go ransack my freezer this weekend.

aiyooooooo....what a thing to show a hungry man.

The pasta looks very very delish; and I love sun-dried tomatoes, (nowadays a little easier to get with cold storage) I totally enjoy the slightly rubbery resistance of the tomatoes when you bite into them...mmmm...

I think tomorrow I go raid my freezer...

starts in earnest in January 2008 despite my fondest wish that it should be protracted to 2009 or beyond.
