Thai fish cakes


Wanted to try something different to the usual fish cake and found this recipe in Global Delights. The fish is seasoned with delicate kaffir leaves and strong curry paste as opposed to the Chinese fish cakes with dried tangerine peel. Very refreshingly tasty and easy to made.

Thai Fish Cakes

300g firm white fish fillets, roughly chopped
Pulse in a food processor until smooth

Then add:
1½ teaspoons red curry paste
1 clove garlic, minced
1 tablespoon fish sauce or to taste
2 tablespoons cornstarch (omitted this)
1 egg white (I added in the whole egg)
Continue pulsing until well combined into a paste.
Mix into the fish paste:
2 kaffir lime leaves, finely chop
1 scallion (spring onion), thinly slice

Divide the mixture into 6 equal portions and shape each with wet hands into flat round patties.
Cover and refrigerate for 15 minutes.
Heat 1 tablespoon oil in a frying pan over a medium heat.
Cook fish cakes for 3 minutes on each side until golden brown.
Remove and slice into thick slivers.


Serve with sweet chilli sauce (add a dash of lime juice and chopped scallion or cilantro).

I love fishcakes, my colleagues and I go to this shop in Subang that specialises in fish cakes and fish balls that use no boric acid; and no preservatives :-)

But the thai fishcake is the spicy version, and the kaffir lime leaves gives it that perfect zing...

One question, what type of fish do you use, or recommend?

I always use d tenggiri(mackerel?)- fresh, never frozen to get tt bounciness.
There is another fish we call 'tofu' fish(dunno d proper name, shaped much like the red snapper) which makes a much smoother cake texture but more work due to the small size and bones.
U planning to cook for ur best half??

Don't get your hopes too high. We serve instant mee like every other day...
But it would be good when you guys are here, more excuses to eat out and bigger crowd means more dishes to have... :p
